Mama Catelli's Veal Chops


Juicy veal chops are seasoned and seared to lock in savory flavor, then served simply to highlight their tender texture. This classic preparation makes for an easy yet special main course any night of the week.

Ingredients


  • 4 veal chops, cut 1” thick

Marinade

  • 1 cup olive oil
  • 1 cup balsamic vinegar 
  • 8 fresh rosemary sprigs 
  • 8 fresh basil leaves
  • 2 garlic cloves, crushed
  • Salt and pepper, to taste
     

Preparation


  1. Combine first six marinade ingredients in plastic bag. Add veal chops, seal bag and marinate in refrigerator for at least one hour or overnight.
  2. Bring chops to room temperature for at least one hour.
  3. Remove chops from marinade; discard marinade. Place chops on grill over medium, ash-covered coals. Grill, uncovered, 15 to 17 minutes to medium (160°F) doneness, turning occasionally.
