Beef: An Elevated Everyday Essential

Storing Beef

To store beef safely, make sure to refrigerate or freeze it as soon as possible after purchasing. Per USDA guidance, beef steaks and roasts should be cooked within five days of purchase, and grinds, stew meat and burgers should be cooked within two. Frozen beef can be safely stored indefinitely but begins to lose quality after four to 12 months.

Cooking Beef

Grass-fed beef is generally leaner than conventional beef and cooks about 30% faster. When preparing grass-fed beef, use a meat thermometer to ensure you don’t overcook. Let the meat rest for five to ten minutes after cooking to allow the juices to redistribute.

The marbling of Wagyu beef makes it easier to cook. When preparing Wagyu, season it simply to allow the flavor of the meat to shine. Avoid using excess oil as the meat releases its own juices while cooking.

To make sure that beef dishes are cooked properly, use an instant-read thermometer to check the temperature.

Steaks can be cooked to a variety of finishes. For medium-rare, remove the steak when the thermometer reads 145°F. For medium, the temperature should be 160°F, and for well-done 170°F. Let all steaks rest for a few minutes before serving.

Ground beef should be fully cooked to an internal temperature of 160°F as measured by a thermometer.
