Veal Loin Chops with Fresh Herb Marinade
Sometimes simple is best, especially when it comes to high quality veal! These loin chops are marinated with fresh herbs, including chives, basil and tarragon, before being grilled. It�s a quick and easy dinner for busy summer nights.

Ingredients
- 4 veal loin chops
- Marinade
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons finely chopped chives
- 1 tablespoon chopped basil
- 1 teaspoon chopped tarragon
Preparation
- Mix all the marinade ingredients in a bowl. Place the veal chops in a shallow dish, pour the marinade over and marinate in the refrigerator for 1 hour.
- Preheat barbecue on high.
- Sear both sides of the veal chops.
- Finish cooking on upper rack or lower heat of the barbecue. Cook to 145�F.
- Remove chops from heat, cover lightly with aluminum foil, allow to rest for 5 minutes and serve.
