Grilled Lamb Loin Chops with Tomato & Mozzarella Salad


Tomatoes are both the main ingredient and part of the dressing for this easy dish. Rich lamb chops provide the protein alongside a tomato, radish, mozzarella cheese and basil salad that’s perfect for lunch or a light dinner.

Ingredients


  • 8 lamb loin chops, trimmed
  • Salt and freshly ground pepper
  • Oregano leaves
  • Olive oil
  • Salad
  • 1/2 pound cherry or grape tomatoes
  • 1 cup diced fresh mozzarella cheese
  • 4 radishes, very finely sliced
  • 6 leaves fresh basil, torn
  • Tomato Mustard Dressing
  • 1/2 pound cherry or grape tomatoes
  • 3 tablespoons olive oil
  • 2 tablespoons sherry vinegar
  • 1 teaspoon whole grain mustard

Preparation


  1. Grill 1/2 pound tomatoes until just soft and place in a blender with 2 tablespoons of olive oil, 1 tablespoon sherry vinegar and mustard. Pulse to combine. Set aside.
  2. In large bowl, combine remaining tomatoes, cheese, radishes and basil. Toss with remaining oil and vinegar. Season to taste with salt and pepper, and set aside.
  3. Brush chops generously with oil and season to taste.
  4. Cook over medium to high heat on a barbecue or grill for 2 to 3 minutes each side for medium-rare, or until cooked as desired. Sprinkle cops with oregano leaves, if desired.
  5. Serve chops with the Salad and drizzle with Tomato Mustard Dressing.
