Ingredients
- 1½ pounds trimmed lamb leg steaks
- 2 tablespoons miso paste
- 1 teaspoon sunflower oil
- 1/2 cup green beans, cut into 1/2” lengths
- 4 carrots, peeled and cut into batons (1/2” x 1/2" x 2”)
- 1 cup thickly sliced cremini mushrooms
- 2 cups water
- 2 packages ramen noodles (discard seasoning packet)
- 2 tablespoons soy sauce, or more to taste
- Spring onions for garnish, if desired
Preparation
- Preheat a lightly oiled grill or grill pan.}Brush lamb steaks with half the miso paste and grill lamb for 3 to 4 minutes per side or until cooked to your liking. Rest for 5 minutes and slice.
- Heat oil in a wok and stir-fry beans, carrots and mushrooms until lightly colored. Add miso and 2 cups water, noodles and soy sauce and cook for 4 to 5 minutes until noodles are just heated through.
- Divide noodles, vegetables and soup between serving bowls. Top noodles with sliced lamb, and garnish with spring onions, if desired.
