Aussie Ground Lamb & Cilantro Mojo Tacos


Sweet orange and pineapple juices, spicy chipotle powder and fresh cilantro and lime liven up ground lamb in this quick and easy recipe. The mojo sauce and lamb mixture comes together in just ten minutes before being wrapped in tortillas.

Ingredients


  • 1 pound ground lamb
  • Mojo
  • 1/2 cup garlic, minced finely
  • 2 tablespoons cumin
  • 2 tablespoons chipotle powder
  • 1/2 cup orange juice
  • 3 bunches cilantro, finely minced with
  • 8 stems saved
  • 3/4 cup oil
  • 1/2 cup pineapple juice
  • Salt and pepper. to taste
  • Tacos
  • 8 tortillas
  • 1 red onion, julienned
  • avocado, sliced

Preparation


  1. Combine Mojo ingredients in a bowl and set aside.
  2. Place large skillet on medium to high heat. Add lamb to pan with a tablespoon of salt and pepper. Use a wooden spoon to break up meat.
  3. Once the meat is caramelized and evenly browned pour in Mojo, stir to make sure it evenly coats all the meat.
  4. Season to taste and remove from heat to assemble tacos with avocado and red onion.
