Mama Catelli's Veal Chops

• 4 veal chops, cut 1” thick


• 1 cup olive oil
• 1 cup balsamic vinegar
• 8 fresh rosemary sprigs
• 8 fresh basil leaves
• 2 garlic cloves, crushed
• Salt and pepper, to taste


  1. Combine first six marinade ingredients in plastic bag. Add veal chops, seal bag and marinate in refrigerator for at least one hour or overnight.
  2. Bring chops to room temperature for at least one hour.
  3. Remove chops from marinade; discard marinade. Place chops on grid over medium, ash-covered coals. Grill, uncovered, 15 to 17 minutes to medium (160°F) doneness, turning occasionally.
