Medallions with Port Wine & Blueberries

4 veal medallions, 4 ounces each




4 tablespoons vegetable oil

½ cup blueberries

4 rosemary leaves

4 tablespoons port wine

2 tablespoons fresh garlic, minced

2 tablespoons ground pepper


  1. Mix all marinade ingredients in a dish and add medallions. Marinate at least 2 hours in refrigerator.
  2. Remove medallions from marinade and drain. Save remaining marinade.
  3. Grill the medallions until desired degree of doneness or until the internal temperature reaches 150°F.
  4. In a skillet on the barbecue, heat the set aside marinade, and pour the marinade directly over the medallions.
